For years, the reflex answer to "where should we go tonight?" in Gilbert has been the Heritage District. The brick-front blocks around Water Tower Plaza did the heavy lifting while Agritopia held down the south end and SanTan Village handled the mall crowd. Summer 2026 quietly ended that arrangement.
Three openings landed within six months of each other, each anchoring a different corner of town, and a fourth cluster broke ground north of the freeway. For a resident, the practical effect is this: the decision about dinner now starts with geography, not with a default.
Three Poles, Not One Downtown
The Heritage District still leads on programming and walkability. What changed is that Epicenter at Agritopia and Northside at SanTan Village both added a marquee dining name this year, and each has enough surrounding tenants to be a full evening on its own. Add the coming Heritage Park build-out at Gilbert Road and Elliot, and Gilbert will have four discrete dining anchors within a fifteen-minute drive of each other by early 2027.
That matters because it changes how you plan. A weeknight in the Heritage District is a different proposition than a weeknight at Epicenter, which is different again from SanTan Village. Northside at SanTan Village: A Steakhouse Arrives
The most consequential opening of the summer was a Texas import.
